Dom Pérignon is Vintage only. Each Vintage wine is created from the best grapes grown in a single year. After an average of 8 years of maturation, harmony is achieved: it showcases perfect equilibrium. The wine is complete, rhythmic and tactile. The nose of Dom Pérignon Vintage 2000 is fresh, crystalline and sharp. The wine unveils an aquatic vegetal world. The attack bursts forth, then matures into a sensual fullness. There are notes of licorice and dried ginger lingering on the skin of pear and mango. The finish gradually unfurls, then settles, smooth, mellow, all-encompassing.

The uniqueness of Dom Pérignon vintages lies in the way they evolve - not steadily in a linear way, but by successive windows of expression that are called "Plénitudes". The First Plénitude comes after around eight years of maturation. For the first time, perfect harmony is achieved. It is the birth of a Millésime: the Dom Pérignon Vintage. Weather conditions were generally warm during 2000. July was colder than average with periods of stormy weather accompanied by spells of heavy rainfall and hail. Annual average temperatures were higher than in previous years. After the first tastings, the Chardonnays, which were harvested after the other grapes, were supple, "easy", round and complex. They add their smooth accents to Dom Pérignon Vintage 2000. The Pinot Noir wines had good structure and length. The grape varieties were similar in terms of quality, which had not been the case in previous years: this dimension explains the classic, well-balanced character of Dom Pérignon Vintage 2000. Nose: Fresh, crystalline, sharp. Aquatic vegetal world with white pepper and gardenia touches. Light, gentle maturity before exhaling peaty scents.
